Ooey, Gooey, Cheesy Goodness – Passover Style.

If you were to ask anyone that knew me what my favorite food was, I guarantee that 75%  would say grilled cheese.  I don’t know what it is, but there is just something so wonderful about slices of gooey cheese melted between slices of bread.  Even at 23 years old, my mouth waters and my eyes light up at the mention of a grilled cheese sandwich.

I bring this up because today is National Grilled Cheese Day, a day that (in my opinion) demands a gourmet grilled cheese feast.  That is, if you aren’t also Jewish.  National Grilled Cheese Day happens to fall right in the middle of Passover, a Jewish holiday where no leavened bread is eaten in commemoration for the Jews’ escape from Egypt thousands of years ago.  For a Jewish grilled cheese lover like myself, this news is heartbreaking.

So, it’s no surprise that I have a new love for the bloggers at YumSugar after they posted a Passover-friendly version of my beloved sandwich. Behold the Matzo Grilled Cheese Sandwich.

It sounds so simple, and it is.  Yet, I never would have come up with this idea on my own (despite my years of creating Matzo Pizzas). I tried it tonight for dinner, and let me tell you – I couldn’t have been more happy!  Thank you YumSugar. Finding a way for me to enjoy a long time favorite food while still holding true to my religious obligations is nothing short of a Passover Miracle! Regardless of whether National Grilled Cheese Day falls during Passover next year, this ingenious little sandwich will certainly be added to my Passover food repertoire for years to come.
